Omelette Bites

  • 1/2 cup breakfast sausage
  • 1/8 cup diced peppers
  • 1/8 cup corn
  • 1/8 cup diced onions
  • 1/8 cup black beans
  • 1/2 cup diced tomatoes
  • 1/4 cup feta cheese
  • 7 eggs
  • Salt & Pepper to taste


  1. Preheat oven to 400F.
  2. Lightly grease the cups of a muffin tray with cooking spray, and set aside.
  3. Cook breakfast sausage in pan on medium heat (cover with lid and cook for about 10 minutes)
  4. Drain sausage once finished cooking and set aside
  5. Add all ingredients NOT INCLUDING EGGS into a medium bowl
  6. In a separate medium bowl whisk eggs
  7. Fill each muffin cup about 3/4 full with veggie, meat and feta mixture
  8. Top each cup with egg mixture
  9. Bake at 400F for 20 minutes or until egg is fully cooked (Try the toothpick test if unsure!)
  10. Let stand in the pan for 5 minutes, then transfer to a pretty plate and serve.
  11. These can be stored in Ziploc baggies in the fridge and re-heated for 20 seconds wrapped in paper towel and ready for breakfast on the go!
