Sweet Potato & Ground Turkey Skillet

This is a recipe you’ll add to your favorites! It is simple to make and this skillet dinner is packed full of flavor and veggies, yum!



  • 2 tbsp extra-virgin olive oil
  • 1 lb ground turkey
  • 1 tsp minced Garlic
  • 1/2 cup onions, sliced into thick strips
  • 1/2 cup zucchini, sliced into strips
  • 1/2 cup squash, sliced into strips
  • 2 cups sweet potato, diced
  • 1 green pepper, sliced into strips
  • 1 red pepper, sliced into strips
  • 2 cups of fresh spinach
  • Salt and pepper (to taste)
  • 1 tsp chili powder
  • 1 tsp rosemary
  • 1 tsp ground cumin
  • 1 tsp thyme
  • 3/4 cup shredded sharp white cheddar cheese


  1. Heat olive oil over medium heat in a large skillet
  2. Add garlic and onions and cook for 1-2 minutes
  3. Add ground turkey, stir, cover and cook for 8-10 minutes
  4. Add peppers, zucchini, sweet potato, chili powder, rosemary, ground cumin, thyme, salt and pepper
  5. Cover the skillet and cook until the sweet potato pieces are tender
  6. While the sweet potato is cooking pre-heat the oven to 400 degrees
  7. Add spinach and put lid back on until spinach wilts just a tad
  8. When the sweet potato is tender, add shredded sharp cheddar cheese and place the skillet to the oven to melt the cheese.
  9. Once the cheese melts, remove from the oven and serve.
